What is Fermented Skate Liver Oil?Nutrients, Uses, and How to Take It

All About The Skate Fish
Skates are fascinating ocean dwellers. Though often mistaken for stingrays, they belong to their own family of flat, cartilaginous fish. Unlike bony fish, skates have skeletons made of cartilage, the same flexible tissue found in human ears and joints. Skate fish are actually more closely related to sharks than they are to fish.
Where Do Skates Live?
Skates are bottom-dwellers that inhabit cool coastal waters around the world, including the North Pacific and North Atlantic Oceans. They prefer sandy or muddy ocean floors, where they glide gracefully and feed on small crustaceans and marine organisms.
Unique Characteristics of Skates
- Wing-like shape: Their wide, flat bodies and wing-shaped fins allow them to “fly” through the water.
- Cartilage structure: Because they are cartilaginous fish (like sharks and rays), they differ structurally from most common ocean species.
- Slow-growing and hardy: Skates are resilient, cold-water fish that store nutrients in their livers.
- Egg layers: Unlike many fish that lay small, soft, and unprotected eggs, skates lay their eggs in distinctive protective cases, often called “mermaid's purses”.
Where Do Our Skate Livers Come From?
At Green Pasture Products, we source our skate livers through Alaskan Leader, a fishing partner that harvests wild-caught skate from the Bering Sea in the Aleutian Islands region of Alaska. The skate are caught using the hook-and-line technique and are a bycatch when fishing for cod fish. This selective fishing method is commonly used to reduce bycatch and support responsible harvesting practices. This, in turn, limits the amount of skate fish available for Green Pasture.

What Exactly Is Fermented Skate Liver Oil?
Fermented Skate Liver Oil is an oil extracted from the livers of skate. Rather than using heat or chemical solvents, the oil is released from the livers through a traditional fermentation process that allows the oil to separate naturally over time without using any heat or chemicals.
This approach honors historical food preservation methods used long before modern industrial extraction existed, offering a way to obtain the precious oil while keeping its naturally occurring components intact.
Research on skate species from the North Pacific shows that skates have lipid-rich livers, meaning their livers naturally contain a high proportion of fats. This makes them well-suited for traditional oil extraction methods . These studies examine the biological composition of skate tissues and help explain why skate livers have historically been used as a source of oil. (1, 2)

What Nutrients are Found in Fermented Skate Liver Oil?
A diverse array of nutrients are found in fish livers, including fat-soluble vitamins, essential fatty acids, and antioxidant compounds. Fermented Skate Liver Oil contains each of the following:
Fat-Soluble Vitamins
The oil contains vitamins A and D, which are naturally present. These vitamins play important roles in supporting normal vision, immune function, and bone health.
Essential Fatty Acids
Skate liver oil contains a spectrum of omega fatty acids: Omega-3, 6, 7, and 9, including long-chain forms such as EPA and DHA, which are commonly found in marine oils. These fatty acids help support cardiovascular, cognitive, and overall cellular function.
Antioxidant Components
Natural antioxidants in the oil help protect its fats in the oil from oxidation. Some research suggests that compounds derived from marine food chains, such as certain polyphenols, may contribute to its antioxidant properties.
Because these nutrients occur in their natural matrix, their concentrations may vary slightly from batch to batch, unlike standardized synthetic supplements. We use fermentation to help preserve the full spectrum of naturally occurring components. Quality is a central focus throughout the entire process. Our Fermented Skate Liver Oil is extensively third-party tested, just like our Fermented Cod Liver Oil products, to help ensure consistency and integrity. We also provide detailed information about sourcing, processing, and testing practices on our Quality and Sustainability page .
