In the early years, our family milked our own cows and produced butter oil right on the farm. As our reach grew, we realized we needed to scale without sacrificing the quality we held so dear.

Today, our partners raise cows on lush, green pastures of rapidly growing grass - especially during times of rapid growth, when the grass is most vibrant. This is the season when the cows naturally produce the richest, most nutrient-dense milk.
We’re proud to work with farmers in the rolling hills of the Midwest, some of whom work on farms that have been in the same family for over 150 years. These small farms, with an average herd size of just 40 cows, go well beyond the minimum organic grazing standards.

Low-Heat Vat Pasteurization
Our partner uses low, gentle heat in small batches, a method known as low-temperature vat pasteurization. It’s the way milk was originally pasteurized and involves using the lowest temperatures allowed. That means it’s as close to raw as possible!
This step helps preserve the natural characteristics of the cream, including the nutrients we aim to retain. It’s a gentle approach that is carefully monitored to ensure the heat stays within a range that respects the integrity of the cream’s naturally occurring nutrients.

Turning Cream into Cultured Butter
After that, our partner separates the cream and cultures it using traditional fermentation methods.
As the cream cultures, it develops natural compounds found in fermented dairy - like vitamin K2. It’s the same kind of butter-making that would’ve been familiar to traditional communities studied by Dr. Price - those who valued fermentation not just for preservation, but for the nutritional qualities it brought to the table.
Centrifugation
