1. Results confirmed the enhanced peroxidative resistivity of a fermented, antioxidant-rich natural cod liver oil over those of corresponding non-fermented products.

2. Fermented cod liver oil had a substantially higher peroxyl radical-scavenging capacity than those of the three non-fermented ones investigated.

3. Natural, untampered fortification of such products with a series of powerful chain-breaking antioxidants through fermentation processes appears to exert a very powerful effect on suppressing the adverse peroxidation of omega 3 fatty acids in such products.

In summary, Dr. Martin Grootveld has been able to confirm the presence of natural antioxidants in our fermented cod liver oil(1).
